Why choose us
You will often ask yourselves if it is really worth spending some extra euros on a good-quality oil rather than on a cheaper one and especially, you wonder how you can be sure that what you choose is really high quality.
It is true that appearance and taste are often valid pointers when you have to make a choice, but reading the labels carefully can also reveal some very relevant factors. Here are some of the more important ones:
check that the olives are Italian and also that the oil has been produced in Italy and not only bottled there. Other countries use harvesting and pressing techniques that alter the oil’s organoleptic and microbiological characteristics and, in order to save on costs, they also frequently use transport systems that do not guarantee the best standards of hygiene.
Extraction must be carried out cold, because only in this way can you be certain that you are purchasing a real, healthy oil from pressed olives.
The olives must not be washed before milling; otherwise output is increased, but at the expense of quality.
