OLIVE CULTIVARS AND CHARACTERISTICS

The high quality of Puglia oils, famous through the world, is very well represented in the two cultivars of the North Bari area:

Cima di Bitonto and Coratina.

Oil extracted from the "Cima di Bitonto" cultivar: this is a sweet, dense oil, moderately fruity and fragrant and with a fine, brilliant yellow colour and slight, green tones; it has a slightly pungent, fresh, soft almond aftertaste, and is especially recommended for enhancing the flavour of the dishes it accompanies, giving them a delicate richness.

Oil extracted from the "Coratina" cultivar:
this is a very fruity oil with a hint of artichoke and a pungent aftertaste; it is a lovely green in colour, with yellow tones, and is popular because of its usefulness for blending with “lifeless” and inferior quality oils. With its fragrant, intense flavour, it is recommended for drizzling over ”bruschetta”, roast fish or in “dips” and, in cooking, to enhance the flavour of food.
